Thiscourse put‘s the focus on the salad bar. It‘s a demonstration course butstudents are expected to take active part in discussion and tasting there willbe plenty of food to taste. The course we will address how the raw materialshould be handled, how to make vegan salads, raw dishes, how to reduce foodwaste by using yesterday’s food as material for today’s dish and etc.
In big cafeterias it is necessaryto have good quality, fresh and healthy food available for the staff that fitsinto budget and the time frame for the kitchen staff to make it.
