The course put‘s the focus on the salad bar. It‘s a demonstration course but participants are expected to take active part in discussion and tasting of different salad dishes. The course will address how to handle the raw material, how to make vegan salads, raw dishes, how to reduce food waste by using yesterday’s food as material for today’s dish and etc.

 

In big cafeterias it is necessary to have good quality, fresh and healthy food available that fits into the budget!
